Savory Sweet Potato Oatmeal
I have only made the first step into the realm of savory oatmeal. What better way to venture into unknown territory than with one of my favorite things – sweet potatoes! I adapted the idea of sweet potato fries and ketchup for a meal that was full of flavors and different textures.
Begin with the normal method, but omit the banana. Instead add:
- 3/4 Small mashed sweet potato
- A sprinkling of Herbs de Provence
- 1/4 tsp salt
While cooking, slice the rest of the sweet potato into crescents and roast for 8-10 minutes.
Top with some ketchup (or your condiment of choice) and the roasted sweet potatoes.
