Savory Sweet Potato Oatmeal

I have only made the first step into the realm of savory oatmeal. What better way to venture into unknown territory than with one of my favorite things – sweet potatoes! I adapted the idea of sweet potato fries and ketchup for a meal that was full of flavors and different textures.

Begin with the normal method, but omit the banana. Instead add:

  • 3/4 Small mashed sweet potato
  • A sprinkling of Herbs de Provence
  • 1/4 tsp salt

While cooking, slice the rest of the sweet potato into crescents and roast for 8-10 minutes.

Top with some ketchup (or your condiment of choice) and the roasted sweet potatoes.

    I love savory oatmeal. My Dad makes a really simple one that my sisters and I call “DKM Oatmeal” in honor of all of the years he made it for us. It is much different than yours, but I really like the looks of the picture. What’s the ketchup like with the oats?
