Veggie Quinoa Salad

I made this ‘salad’ in order to use up some ingredients. Its slightly Asian, fully delicious.

Veggie Quinoa Salad

1/4 C dry quinoa

1/2 Near East Black Bean Soup (dry)

1 Cup raw/frozen vegetables – I used broccoli, carrots, peas, collard greens

1 tsp Soy sauce

1/4 tsp Seasame oil

Step One: Put about 1 cup of water on the stove and bring to a boil. Add the quinoa and soup mix.

Step two: When the quinoa is about half cooked (10 minutes), add the vegetables.

Step three: After everything is fully cooked (another 10 minutes), strain any remain liquid.

Step four: Stir in the soy sauce and seasame oil, and enjoy!

It looks good, and tastes even better.
